Would you please introduce yourself and what you do?

My name is Alain Lemaire and I am a chef. I am the Co-owner and Executive Chef of Sensory Delights, LLC and Arome Catering, both full-service catering companies based out of South Florida and Haiti respectively. I am a native of Port-au-Prince, Haiti, where I first discovered my interest in cooking. Later on, I developed an increasing passion for food and food service which led me to attend the Culinary program at the acclaimed Johnson & Wales University. Thanks to my heritage and having spent most of my career in South Florida, Caribbean and Latin flavors play a major role in my style of cooking fresh, bold and in your face!

2.   What was the WHY that drives you to choose this business or journey?

Answer: I have always had an interest in food service and hospitality overall. I love cooking for friends and having them over my house. It didn’t really hit me until it was time to decide career path; I would choose that, this is exactly what I need to do in life. My journey as a caterer and event chef was something out of the need to do things differently, to think outside of the box and pave my own path.

3.   Have you accounted trials that shaped you into who you are today and how have you increased your goal to challenge them?

Answer:  I have accounted many different trials throughout my career and I still do today: discrimination, physical and emotional trials you name them. I used these trials and hardships as my motivation to better myself and my craft. I see each mistake, mishaps, barriers as a lesson to carry throughout life.

4.     If there is one person you want or wanted to thank for guiding you, who will that be?

Answer:  There wasn’t one specific person at the beginning that I can say inspired, guided or pushed me to follow this career path. Back in Haiti, 15 to 20 years ago, a career as a chef was frowned upon. You were either a lawyer, doctor or architect. What I can truly say is that I was blessed enough to meet and team up with some great individuals. They keep me motivated, push me and inspire me.

5.      How would you recommend your business or work to others? why are you the best individual to do business within your area of expertise?

Answer:  This business is very demanding because you work long hours and non-stop for days and even weeks for minimum reward. If you are not in love with cooking and service, then you might find it discouraging at times. The best thing is to know who you are as an individual, stand for your values and beliefs, be open-minded and respectful and be always willing to learn. I am the best at what I do because of the fact that I apply all these rules into my daily life.

6.      Any word of encouragement to someone watching you right now?

Answer: In life, it is not about how many punches you can throw, it is more about how many punches you can take and keep moving forward.
